A Dutchman is getting his taste of fame for being the world’s first and only milk sommelier, specializing in tasting dairy products and telling the “stories of the rich diversity of milk.”

De Groot is to milk what sommeliers are to wine and baristas to coffee. He can tell different milk products apart and offer dairy recommendations according to people’s preferences.

With years of experience, de Groot is able to explain a glass of milk's fat content, the breed of cow that produces it and even the soil and forage the cows are fed off.

“First you smell it. Then you swirl it. Then you find out what does it do to your tongue, when you can really experience the whole body of the milk," he said in an interview with Xinhua in between sips of milk from wine glasses.

De Groot fell in love with drinking milk after tasting a raw, unpasteurized sample at a local farm in the Netherlands. The strong but rich taste of raw milk fascinated him, who started comparing different dairy products across the country and went on to become an expert in milk tasting.

Consuming more than three liters of milk every day, de Groot confesses he drinks milk not only for breakfast, lunch and dinner but also when he watches TV on his couch.

De Groot hosts milk tastings as part of his job. At such events, he invites farm owners or curious customers to taste and compare supermarket milk products, raw farm milk and organic, unpasteurized dairy products.

“The taste of milk differs, depending on the breeds of cows and the forages they eat,” de Groot explained. “While dairies produced by grass-fed cows taste fruity, products coming from corn-fed cows have a fuller, bitter taste.”

As the world’s one and only milk sommelier, de Groot is now travelling around the globe, deepening his understanding of the variety of milk products while educating people about distinctive properties and gains of milk.
